Payne's Rise

Payne’s Rise is a boutique winery located in the cool climate of Seville in the Yarra Valley. With an emphasis on carefully selecting fruit for their small batch of production, proprietors Tim and Narelle Cullen bring love, passion and commitment to their vineyard.

The vineyard was established in 1999, and is a reflection of the couple’s commitment to the historical surrounds of Seville. By incorporating the old 1860s homestead of Seville’s first settler, Thomas Payne, into the new design of the cellar door, the winery has a strong focus on the original infrastructure of the property.

The cellar door allows guests to wander through the original house and outbuildings. With a property so rich in history, Tim and Narelle aim to present a place rich in character and charm, where visitors can relax and enjoy their boutique fine wines. Experience firsthand the unique history of Payne’s Rise and relax under the ancient elm and oak trees whilst taking in the picturesque views of the Yarra Valley.

Situated 200 metres above sea level, the cool climate, coupled with fertile red volcanic light clay, produces a slow and even fruit ripening period, which is reflected in the winery’s boutique wines. Specialising in sauvignon blanc, chardonnay, shiraz, cabernet sauvignon, rosé and sparkling, Payne’s Rise is an exceptional winery with a focus on fruit driven wines.

The winner of a number of awards, Payne’s Rise is fast becoming a premier winery in the Yarra Valley region. Awards include a gold medal, the trophy for Best Shriaz and the trophy for Best Single Vineyard Wine at the 2011 Yarra Valley Wine Show for their 2010 Payne’s Rise Redlands Shiraz, and a silver medal at the 2010 Victorian Wine Show for their 2009 Payne’s Rise Cabernet Sauvignon. It is no wonder Payne’s Rise is becoming renowned for their boutique wines.

Tasting Notes


2011 Payne’s Rise Sauvignon Blanc


Grassy, citrus and gooseberry tropical fruit characters. Texture and complexity are added by barrel fermentation in old oak, and balanced by clean acidity.


2010 Payne’s Rise Chardonnay

The wine displays white peach and nectarine with hints of cashew and spice. The palate is tight and refined and has a clean fine acid, mineral structure with flavours of white peach, nectarine and citrus. A spicy savoury complexity is added to the palate and nose, derived from the use of yeast lees stirring and barrel ferments.




2010 Payne’s Rise Redlands Shiraz

True cool climate shiraz. Black and white pepper, spice and stalky whole bunch characters with brambly red fruits. The palate has strong fleshy fruit, ripe cherry and raspberry, plenty of spice, savoury flavours, clean acidity and silky tannins. Finishes lively with great length of flavour and texture.




2009 Payne’s Rise Cabernet Sauvignon


Aromas of blackcurrant, cherry, mint, herbs and dusty oak. The palate is medium weight with blackcurrant, cherry and herbs. A fruit driven wine with firm acid and tannin structure.
