Immerse in the Yarra Valley

Stephen and Helen Myles established Immerse in the Yarra Valley in 2002, renovating the existing buildings and vineyard on the Dixons Creek property. With 24.9 hectares under vine on-site, the 25-year-old vines produce fruit of intense flavour and consistently high quality.

Specialising in chardonnay and pinot noir, the winery produces about 1200 cases a year. As well as these specialties, Immerse in the Yarra Valley produce unwooded chardonnay, sauvignon blanc, cabernet merlot, shiraz, shiraz viognier and sparkling chardonnay, with the varieties differing from year to year depending on the crop.

Immerse in the Yarra Valley began as a winery with a restaurant and accommodation, but in the past five years has grown to be a popular venue for weddings and conferences.

The winery has everything a bride and groom could wish for in one location – picturesque Yarra Valley views, an on-site chapel for ceremonies, fantastic food and wine and on-site accommodation, including a bridal suite.

The à la carte restaurant is famous for its signature dishes like their salt and pepper calamari and has been featured in The Age Good Food Guide for the past six years.

Tasting Notes


NV Immerse Sparkling Chardonnay

This light, elegant sparkling is made from 80 per cent chardonnay, 15 per cent chenin blanc and five per cent colombard grapes. Very bubbly and subtly sweet, this sparkling  chardonnay makes a wonderful afternoon wine or aperitif. Drink now or cellar for two to three years.



2010 Immerse Sauvignon Blanc

A classic Yarra Valley cool climate sauvignon blanc, this wine is clean and fresh with white asparagus aromas, flavours of lychee and kiwifruit with a hint of grapefruit. A beautifully balanced wine, from the first taste to the lingering white peach savouring flavours at the back of the palate.



2008 Immerse Cabernet Merlot

A blend of 90 per cent cabernet and only ten per cent merlot allows for more intense cabernet flavours. Dark chocolate and mocha are the first elegant tastes to hit your palate, followed by an explosive berry fruit finish. Matured for two and a half years in seasoned French oak and new American oak barriques.



2008 Immerse Oscars Reserve Shiraz

A dense dark red in colour, with dark chocolate and clove flavours surrounded by a rich, spicy layer of plum and vanilla. The soft tannins will linger to a beautifully delicate and velvety finish. After 21 months in new French oak, this shiraz will develop for another six years in your cellar.
